With decades of hands-on experience, Steve helps producers improve fertility, efficiency, and profitability using practical, low-cost strategies grounded in animal observation, mineral balance, soil health, genetic and epigenetic selection.

Steve is best known for teaching producers how to truly “see” quality beef on the hoof, and for his signature Solo Cup Cow concept—a simple visual framework for identifying low-maintenance, high-fertility, grass-efficient cattle.

Day 1: Practical Genetics & Herd Selection

March 25 | 11:00 AM – 5:00 PM

Learn the real traits that matter—and how to see them in live animals.

Steve will cover:

  • Profit per acre vs. frame size

  • Bull selection rules that actually work

  • The “Solo Cup Cow” concept for grass efficiency

  • Structural longevity and functional conformation

  • Identifying fertility in your herd with your eyes, not just paperwork

Day 2: Eating Quality & Building Your Ranch Index

March 26 | 8:00 AM – 4:00 PM (Lunch Provided)

Most producers don’t connect genetics to eating quality until the beef is already disappointing.

Steve will show you how to select for:

  • Butterfat and flavor

  • Tenderness and carcass indicators

  • Visual cues for finish patterns

  • Building a simple ranch-specific selection scorecard

  • Replacement and culling rules you can use immediately

Day 3: Epigenetics, Minerals & Herd Resilience

Genetics load the gun, environment pulls the trigger.

For Eco-Ag U all-day workshops: Due to limited space, cancellations received through November 1st, 2024 are entitled to an 80% credit to be applied to AcresUSA subscriptions, books, DVDs, audio CDs, or future conference fees.
